Even if we have grown up in a Nepali household, we may still be unfamiliar with Palpali Chukauni. Chukauni is an authentic Palpali salad dish made of yogurt and potatoes garnished with mustard seeds and spices. People who grew up in Palpa are familiar with the authentic salad dish.
The dish is straightforward to make and the ingredients required to put together an authentic Chukauni is easily accessible in all parts of Nepal. With the help of growing dining places and foods from all over the country, several Chukauni stations have also been opened around Kathmandu valley. We have put together a recipe that we can use to make authentic Chukauni in the comforts of our home.
Ingredients need to make Palpali Chukauni Achar
- Baby potatoes
- 1 red onion
- 2 chili peppers
- 1 whole lemon
- 2 cups of plain yogurt
- 1 tablespoon of salt, half a tablespoon of chili powder, 1 tablespoon of turmeric
- 3 tablespoons of mustard oil
- Around 15 to 20 fenugreek seeds
- Freshly chopped cilantro
How to make Palpali Chukauni at home?
Wash the potatoes and put them potatoes to boil on medium heat. Baby potatoes are quick to cook and it is easier to peel them. After 20 minutes the potatoes should be ready to peel. You can check whether the potato is boiled by sticking a fork inside it. If the fork slips inside easily, the potatoes are ready. Wash the potatoes in cold water after they are boiled and peel the potato skin. Cut the potatoes into small dice.
Add the potatoes to a mixing bowl and then add the diced onions, chili peppers, salt, chilli powder. Squeeze lemon juice on top of the mixture. Add yogurt into the bowl and mix the ingredients thoroughly. If the yogurt is thick, you can use a couple of tablespoons of water until the consistency is not too thick or not too runny.
Heat a pan of mustard oil on medium heat. Pour the fenugreek seeds and fry them till they are golden. Before the seeds turn dark brown, turn the heat off and pour the oil into the mixing bowl on top of the potatoes. Mix the potatoes well and they will be ready to serve. You can garnish the dish with fresh cilantro and add chili on top as per your liking.
